Popular Manitou Springs eatery fuses Old World recipes with New World creative approach.

Manitou Springs, CO (Bellandi Group) – When a restaurant already has numerous awards, a loyal following and the Pierogi market cornered in Southern Colorado, how does it get to the next level? If you are PJ’s Bistro owner, Paul Jakubczyk, you add more---more mouthwatering menu items, a more select beer and wine roster and a refreshed brand. The new look and menu were unveiled this week at the Manitou Springs restaurant.

“We didn’t want to rest on our laurels,” said owner Paul Jakubczyk. “We are already well-known for our Polish-influenced dishes---potato pancakes and pierogis. But our chef enjoys creating new dishes and it was time to come out with an updated look and feel for the restaurant, so we decided to debut both at the same time. So far, the feedback has been very positive—guests like the new logo and new items such as the PJ’s Fish and Chips are getting good reviews.” Specialty drinks and locally-made artisan desserts have also been added to round out the restaurant’s “pub grub” offerings.

A well-established Manitou Springs eating place, PJ’s Bistro is frequented by tourists and locals alike. “For us, it’s all about providing great food and great service,” says Jakubczyk. “Our servers are known for being knowledgeable about the menu and are experts at recommending pairings.” Jakubczyk, a native of Krakow, Poland, was raised with the recipes of his homeland, which he uses to inspire the restaurant’s dishes.

As Manitou Springs prepares for the high season of tourism, PJ’s Bistro continues to place its unique spin on Old World favorites while originating new and appetizing menu items.

Pikes Peak International Raceway (PPIR) and Bondurant School of High Performance Driving in Fountain, hosted representatives from local media Tuesday, including Chris Walker from SouthSideBusiness.com. The event was held to introduce the new partnership between Bondurant and PPIR.

In addition to answering questions about the driving school, attendees were given some brief instruction, taken on drive-alongs at speeds topping 120mph, and even got to do some driving themselves (closer to 80mph) around the track in Bondurant’s fleet of Pontiac Solstices.

The Bondurant school in Chandler Arizona was founded by very successful retired racer, Bob Bondurant in 1968. At that facility, you can learn not only high speed driving techniques, but things like how to survive an attack, take out/pit manuevers, reverse 180’s, what to do if you’re in the passenger seat and the driver dies! and lots more.

The PPIR location purports to offer “an adrenalized performance driving experience like no other”. Courses include Timed Autocross, Hot laps, Lead and Follow, ProKart Grand Prix, Accident Avoidance, Team Slolam and custom programs. Although they’ve only been officially open in Fountain for a few weeks, Bondurant is already looking to expand its offerings here including Teen Driving and Go Karts. They’ll also be working with sponsor, Chevrolet, to see if they can’t add some Camero’s to the fleet.

Programs include Team Building, Top Performance/Incentive Rewards, Product Launches, Charity Functions, Dinners, Banquets and Award Presentations, Client Appreciation Days and Birthday, Bachelor/Bachelorette parties.

Whether you’re training to be a professional racer, body guard, security professional, chauffer, want a treat employees, clients or customers to a great time or just want to experience the thrill of high performance driving for yourself, Bondurant is a great addition to the “things to do” list in the Pikes Peak region. Colorado Springs (Laura Carno Consulting)- Honor Flight of Southern Colorado will be taking its first flight on June 15th, 2012.  This comes one year from the time they became a 501(C) 3 non-profit organization.

Honor Flight of Southern Colorado transports World War II veterans to Washington D.C. so they can visit and reflect on the World War II Memorial.  Top priority was given to the most senior veterans and those who may be terminally ill.

They have scheduled a pre-flight luncheon and pre-flight send-off and are inviting the community’s participation.

The Pre-Flight Luncheon is scheduled for June 14th at 12:00 Noon, at The Academy Hotel, 8110 N. Academy Blvd, Colorado Springs.  The cost is $10.00 per person, but free to WWII Veterans. Peakview Windows and Siding recently introduced their own brand of siding to the area. The Peak Collection is especially designed to stand up to Pikes Peak area weather and climate.

Peakview owner, Shaun O’Laughlin (below) explains that the reason he’s done well even through the recession is in large part because he’s always focused on selling the best, as opposed to the cheapest. It makes good business sense. After all, getting business through repeat customers and referrals is a lot less expensive and more efficient than constantly needing to find new ones. He and his staff are certified by the Vinyl Siding Institute’s Certified Installer program, a continuing education program aimed at keeping professionals up to date on the proper and latest installation techniques.
