Iconic Tex-Mex restaurant bringing fresh food and fun atmosphere
Chuy’s, an Austin-based Tex-Mex restaurant known for its inviting atmosphere and from-scratch menu, is planning to open its first location in the Colorado Springs area this spring at 9297 Forest Bluffs View near the corner of Briargate Boulevard and Chapel Hills Drive.
Founders Mike Young and John Zapp opened the first Chuy's in 1982 in an abandoned Texas Barbeque restaurant in Austin with a vision of creating a fun and funky Tex-Mex restaurant where their friends and family could enjoy authentic and fresh food at a great price.
Chuy’s offers a unique dining experience focused on made-from-scratch Tex-Mex recipes in a fun, eclectic atmosphere. The menu features authentic dishes created with hand-rolled tortillas made fresh all day on a traditional comal in the dining room. Customer favorites include Stuffed Chile Rellenos, Chicka-Chicka Boom-Boom Enchiladas and Chuy’s famous Big As Yo’ Face Burritos.
The eatery is known for its funky décor, including: a custom Elvis Shrine, a dog wall which is covered in photos of local dogs provided by customers, hand-crafted metal palm trees, as well as a hubcap-covered ceiling.
“The culture and tight-knit feel of the Colorado Springs community was a big draw. Similar to Chuy’s original roots in Austin, Colorado Springs is a big city with a small-town feel that we feel is the perfect fit for us,” said Local Owner and Operator, Joanna Hicks. “We like to say that if you’ve seen one Chuy’s, you’ve seen one Chuy’s because no two locations are the same. The Colorado Springs restaurant will be unique to this great community.”
Chuy's sets itself apart with its one-of-a-kind happy hour offered Monday through Friday from 4 – 7 pm. In addition to discounted drinks, such as margaritas made with fresh squeezed lime juice and hand shaken Texas Martinis, happy hour customers can enjoy Chuy's famous Fully-Loaded Nacho Car for free.
