Cowboy Star Restaurant and Butcher Shop makes is now open in Colorado Springs at its new location in University Village.   

Cowboy Star serves up a unique dining experience by combining contemporary American cuisine with a western flare. The restaurant also features an on-site butcher shop with USDA cuts brought in from local farms and ranches that adhere to the highest integrity farming practices including 100% grass and corn fed beef along with several free range poultry and game options.   

Displaying a rough and rugged, yet polished look, the restaurant incorporates local design touches, such as repurposed Waldo Canyon wood, hand crafted by a local Colorado Springs carpenter, as well as vintage cowboy accents, giving Cowboy Star a welcoming Colorado atmosphere.  Guests can expect a fine dining experience featuring culinary decadences such Seared Sea Scallops, Braised Turkey Thigh, Roasted Seasonal Mushrooms, Rabbit Sausage, Dry Aged Rib Chop, Gold Star Wagyu, Kobe Style Skirt Steak, Miyazaki Wagyu New York and Rib Eye Steak. Libations will include specialty cocktails and samplings from the restaurant’s extensive wine list, as well as local craft beers on tap.  

A stunning display kitchen is the focal point of Cowboy Star, offering an insiders view of the action. The bar at Cowboy Star offers a stylish and cozy environment complete with large leather booths, a dramatic view of Pikes Peak and signature handcrafted cocktails. The Old West ambiance provides a laid-back and stylish background, perfect for private parties and special events.  

Originating in San Diego, Calif., owners Jon and Angie Weber and Victor Jimenez chose Colorado Springs for their second location and intend to expand Cowboy Star Restaurant and Butcher Shop across the nation. “We look forward to this positive growth. We feel that Colorado Springs has an amazing culinary community and we are looking forward to becoming a part of that,” said Jon Weber.

M-S 11:30-2:30 for lunch

Dinner M-Th 5-10, Fri and Sat 5-10:30
